What is Cacao Butter?

Cacao butter is the pure, creamy fat extracted from cacao beans. During the chocolate-making process, cacao beans are fermented, dried, roasted, and cold-pressed to separate the butter from the solids. The result is a silky-smooth, ivory-colored butter with a rich chocolate aroma. Our cacao butter is extracted using traditional methods that preserve its natural nutrients and antioxidants.

Transparent Sourcing

CACOCO & Coracao’s cacao is sourced from the central Huallaga Valley in the San Martin region of Peru, a region known for producing some of the worlds finest criollo cacao. We source our Cacao from Acopagro, a cooperative of more than 2,000 small organic cacao producers. In addition to cacao production, Acopagro promotes agroforestry systems and regenerative farming practices to keep replenishing the land. Furthermore, Acopagro manages the conservation of 108,000 acres of forest in the Huallaga region. Our Cacao is organically grown where the air is fresh and the soil is rich. We strive to source from heirloom varieties native to the region, known for superior flavor, aromatics, and contribution to local biodiversity. All of our farming partners are paid Fair Trade wages or above.

This is the same pressed cacao fat we use to build our own chocolate bars — sold to you in raw form, so you can take the recipe in your own direction. Cold-pressed from Criollo beans, the world's most delicate cacao varietal (less than 5% of the global supply), it carries faint notes of dried apricot and toasted hazelnut that come through in everything you make with it.

Storage and shelf life

Keep sealed in a cool, dry pantry. Cacao butter is shelf-stable for up to two years and develops a subtle bloom over time that's purely cosmetic — gently warming it back to liquid restores the original character.
