We've always thought there's something tender about kunafa-pistachio — the slow roasted scent, the soft pull of the spoon, the way it brings people back to a childhood kitchen they didn't know they missed.
So we folded ours into a deep 81% cacao shell — Stone-ground from organic almonds, finished with a quiet hum of Mediterranean sea salt. Each bar is two soft bites, made for an unhurried afternoon, a shared moment, or simply a kindness to yourself.
Made gently in our Richmond, California kitchen — without dairy, gluten, soy, or refined sugar, and with the kind of cacao we've been sourcing from the same farms for nearly two decades.

How it comes together.
A 60% dark chocolate shell wraps a kataifi-pistachio crunch with toasted coconut and tahini, sweetened only with organic coconut sugar — never refined sugar.

Why this is different.
Most chocolate hides additives — soy lecithin, palm oil, refined sugars, "natural flavours." We make ours with eight named ingredients, all of which you can pronounce, and none of which we'd hide.
The cacao is single-origin and fair-trade. The kitchen is employee-owned. The shipping is climate-neutral certified. It's all on the label.

Every box is FSC-certified recycled paperboard, printed with soy-based inks. The inner wrapper is a plant-derived compostable film — same as our bar wrappers, made from wood pulp.

When we set out to make these, we kept coming back to the same memory — afternoons in the kitchen, a spoon of kunafa-pistachio, that quiet pause before the next bite. We wanted these bars to carry a little of that softness. We stone-grind the almonds slowly to keep the natural oils intact, then fold them into our deepest 81% shell. Two bites, made to be savoured.

Things we're often asked.
Is the kunafa-pistachio inside crunchy or smooth?
It's silky smooth. We stone-grind the almonds slowly, just enough to keep their natural oils intact — the result is a soft, velvety pull when you bite through the cacao shell. No added oils, no stabilizers.
Why 81% cacao? Doesn't that make it very bitter?
It would, on its own. But the natural creaminess of the kunafa-pistachio and a touch of coconut sugar balance the cacao beautifully — most people are surprised at how soft and round it tastes. It's deep, but never sharp.
Are these gentle on allergies?
Yes — they're dairy-free, gluten-free, soy-free, peanut-free, and made without refined sugar. They do contain almonds, and are made in a kitchen that also handles other tree nuts and coconut. How long do the bars stay fresh?
Around 12 months, kept somewhere cool, dry, and out of direct sun. Because we don't use stabilizers, in warmer months we'll quietly tuck a thermal liner into your shipment — full hot-weather shipping notes are at checkout.
Where do the almonds come from?
From small organic groves in California's Central Valley — the same growers we've worked with for nearly a decade. The cacao comes from regenerative farms in Peru and the Dominican Republic, partners we've known by name for years.
