Is your chocolate raw?

The short answer is: No.

The longer answer: Like fine wine, coffee, sourdough bread, cheese and kombucha, chocolate is a fermented food. Cacao fermentation is an ancient and integral process that turns an extremely bitter seed into a more digestible and enjoyable food, giving cacao much of the magical flavor of chocolate we all love. During fermentation, the temperatures will naturally rise above 118° Fahrenheit, and sometimes as high as 150° F. All "raw" chocolates on the market, that are edible, use fermented cacao beans, however companies may still choose to market their cacao as raw. Our cacao is also lightly roasted from sustainable farms we adore. We don't believe the light roasting takes away from the health benefits of cacao, we think it makes it even safer, as it gets rid of any bad bacteria or mold that could be on the beans after the sun drying & fermentation process, and makes the cacao even more delicious by giving it a light roast. Our main effort and focus goes into choosing the best cacao sourcing in terms of flavor, quality and fair treatment for farmers.

That said, the majority of nuts and nut butter that we use in our chocolate and fillings are unroasted. The California almonds in our Sea Salt and Almond Bar, for example, are soaked and then dehydrated. We also make almond butter, cashew butter and coconut butter fresh from scratch for our chocolate fillings.

What’s the shelf life of your chocolate and how do I store it?

Chocolate is best stored cool and dry, the ideal temp being 65° Fahrenheit. You can also store chocolate in the fridge to prolong shelf life. All chocolate absorbs moisture and flavor. So make sure to store it in an airtight bag or container to avoid moisture damage and picking up other flavors from your fridge.

Our truffles have an average 3-month shelf life.

Our chocolate bars have an average 6-month shelf life.

Our Cacoco Drinking Chocolates have an average 1-year shelf life.

All packaged items will have a better by date of 3 - 9 months from the creation date.
