We blend cashew butter and yacon syrup to make our luscious, dairy free caramel. Yacon is another wondrous plant that grows in the Peruvian Andes Mountain range. Yacon syrup is pressed from the root of the yacon plant. It has a delicious molasses-like flavor, is a prebiotic (beneficial for healthy gut flora), has lots of fiber, and is considered to be nearly non-glycemic.
We make our signature 81% dark chocolate with just four super fresh, high quality, and nutrient dense ingredients: organic, unroasted cacao beans; organic, low glycemic coconut sugar; sun cured, wild-crafted Balinese vanilla beans; and mineral rich Himalayan crystal salt. Raw cacao is bursting with vitamins, minerals, antioxidants, and “happy brain” chemicals.
